Dairy-free Buttermilk Substitution

If you don't keep buttermilk on hand or don't use it because of milk allergies, here is a simple substitution:

1 c soymilk
1 Tbsp lemon juice

Mix and let stand a few minutes before using.

What about using Lactose free milk instead of soymilk?

Not really sure if that would work or not. We've never used lactose free milk. My suggestion is to just give it a try and see what you get. Use a small amount so that you don't waste a lot if it doesn't work out.

do you use sweetened or unsweetened?

Anonymous ~ I used the unsweetened. I suppose it really depends on what you are using it for. If it is a dessert or something like pancakes, I don't see what sweetened "milk" would hurt. :) Good luck!
